This type of pig can be 50%, 75% or 100% pure Iberian pig breed. They roam free in the Guijuelo mountains and they are fed with acorns as soon as they stop being milk-fed. Due to the cost of maintenance of these pigs, farmers tend to work with 75% and 100% pure breeds to guarantee the best quality of meat. These are the reasons why the meat produced from acorn fed Iberian pigs has more intense and richer flavours. The flavour of the ham shoulder is a little bit milder than the ham because it is not as muscular.
All our Iberico products come from Guijuelo, one of the most popular areas in Spain for the production of Iberian ham. Our Iberico delicacies come from a family-run company based in Guijuelo itself. They all have the Iberico Quality label that proves that the pigs have been treated, cared for and fed under the Iberico standards and regulations. The main characteristic of the Iberian pig is that it has a higher level of intramuscular fat infiltration compared to the standard white pig. This characteristic makes its meat more intense and gives it a flavoursome taste.
